Saba (marinated mackerel)


 How to make 
 mackerel
 cut in half
 cut off fish spine
 put sea salt (pickling in salt)

  we use Hakata no shio(sea salt)
 both side 
wait 40-60 minute
 water comes out from fish
 rinse with water
 marinated with rice vinegar (about 20 minute)


 cut off ribs

 take out small bones with tweezers

 take off skin
